    In a bowl, combine lean ground beef, diced onion, garlic, coriander, green chillies (if using), smoked paprika, black pepper, cayenne, and salt. Mix well with your hands until thoroughly combined.

    Take one sliced pitta bread and spread approximately one-fifth of the meat filling evenly inside. Aim for a thickness similar to what is shown in the video.

    Heat a pan (a griddle pan is recommended for grill marks) and spray with cooking spray. Place the filled pitta bread in the pan. Cook on medium-high heat for 2-3 minutes per side, until the outside is crispy and the meat is cooked through.
