Instructions

For the sushi rice

    In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar and salt dissolve. Let cool. Pour over cooked sushi rice and mix well.

For the spicy tuna

    In a bowl, combine flaked tuna, mayonnaise, sriracha, and sesame oil. Mix well.

Assembly

    Line a baking dish with plastic wrap. Press the sushi rice evenly into the dish. Cover and refrigerate for at least 30 minutes to firm up. Once firm, lift the rice out using the plastic wrap and cut into triangle shapes.

    Heat oil in a non-stick skillet over medium-high heat. Fry the rice triangles for 3-4 minutes per side, until golden brown and crispy.
