The best homemade Christmas present. It costs a fortune to buy in the shops, will instantly make you feel Christmasy when you make it & your friends & family will be blown away that you actually made something so delicious. It lasts forever, but thin slices with a coffee or glass of red wine, make this the most wonderful treat at this time of the year.

Instructions

    Step 1: Melt Honey and Sugar

    Put sugar and honey in a small saucepan and melt to combine over moderate heat.

    Step 2: Add Chocolate

    Remove from heat and add melted chocolate.

    Step 3: Combine Dry Ingredients and Spices

    Add flour, spices, cocoa, dried fruit, and salt to a mixing bowl.

    Step 4: Mix Wet and Dry Ingredients

    Add the melted chocolate mixture to the dry ingredients. Add nuts and use a large metal spoon, working quickly to mix the lot together.

    Step 5: Prepare the Tin

    Line a 22cm springform tin with greaseproof paper.

    Step 6: Press Mixture into Tin

    Use wet hands, with the mixture cool enough to handle, press the mix into the tin. Flatten and smooth with your wet hands until even. Push any dried fruit beneath the surface so they don’t catch.

    Step 7: Bake

    35 min

    Cook in oven at 160C / 140C fan for around 35 minutes until ever so slightly puffed on top, firm to touch, but you can still push your finger in.

    Step 8: Cool and Dust

    Remove from oven, dust over with icing sugar. It will firm up as it cools; it should be hard, but still manageable to slice, like nougat.
