
Mamgu's bara brith
A traditional Welsh fruit loaf, perfect with a cup of tea.
Instructions

Step 1: Brew the tea
5 minBrew the tea bags in the boiling water for 5 minutes. Remove the tea bags whilst the tea is still hot and add the sugar, stir until dissolved.

Step 2: Soak the fruit
Pour the sweet tea over the dried fruit, cover and leave to stand overnight. (The author notes they only left it for two hours).

Step 3: Mix the batter
Mix together all of the dry ingredients, slowly stirring in the egg, soaked fruit and remaining sweet tea.

Step 4: Prepare the tin
When the mixture has come to a thick cake-like mixture, pour it into a lightly greased and bottom-lined 900g loaf tin.

Step 5: Bake the bara brith
90 minPlace into a preheated oven at 170 C / Gas 3 for 1 1/2 hours.

Step 6: Cool and serve
10 minLeave to stand for 10 minutes before turning out the cake onto a cooling rack.
