
LOBSTER THERMIDOR
A truly luxury classic dish for a special occasion. Rich, herby, slightly spicy butter is brushed on as the lobster cooks, making for a super-indulgent barbecue feast to remember.
Instructions
For the Thermidor Butter

Step 1: Prepare the Thermidor Butter
Put all of the ingredients for the butter into a bowl and beat until fully combined.
For the Lobster

Step 2: Prepare the Lobsters
Lay the lobster halves on a board and lightly tap the claws with the back of your knife to crack them open - this will help the claw meat to cook as quickly as the tail meat in the middle.

Step 3: Butter and Cook the Lobster
15 minPlace the lobster halves, cut side up, on a metal tray and spoon the thermidor butter evenly over the flesh. Place the tray on the barbecue, put the lid on and cook for 12-15 minutes or so, or until the lobster meat is cooked.
To Serve

Step 4: Serve
Carefully transfer the lobster halves to individual plates and pile some salad leaves on the side. Serve with lemon wedges on the side for squeezing over, and crusty bread to soak up all the buttery lobster juices.
