Step 1: Boil and Shock Green Beans

Process the garlic cloves with the avocado oil until spoonable, with a watery texture but still visible pieces of garlic.

4 minHeat a wide skillet or wok over high heat. Add avocado oil to coat the bottom. Once shimmering, add green beans in a single layer. Let sit undisturbed for 1 to 2 minutes until blistered. Toss and repeat once more.

2 minAdd the prepared garlic paste to the pan with the green beans and cook and toss for 1-2 minutes until fragrant. Remove green beans to a serving bowl.

1 minIn the same dirty pan, add sesame oil, soy sauce, and sugar. Toss quickly until glossy and the sugar is melted.

Pour the glaze over the green beans. Add the lemon zest and juice, and generously salt to taste. Add optional sesame seeds or chili flakes.
