EARL GREY AND LEMON CURD YOGHURT LOAF

Instructions

    Step 1: Preheat oven and prepare tin

    Preheat oven to 175 degrees c. Line a loaf tin. Set aside.

    Step 2: Combine dry ingredients

    Combine dry ingredients into a mixing bowl. Whisk together.

    Step 3: Combine wet ingredients and add tea leaves

    Combine wet ingredients in a separate bowl and whisk well until light and fluffy. Fold in the tea leaves.

    Step 4: Combine wet and dry ingredients

    Sift dry ingredients into the wet and mix until just incorporated (be careful not to over-mix, cake will turn out dense !!)

    Step 5: Add batter and blackberries to tin

    Spoon the batter into a prepared loaf tin, adding blackberries halfway through.

    Step 6: Bake the loaf

    45 min

    Bake in oven for 40-50 minutes or until golden and a toothpick comes out clean when inserted into the centre. Set aside to cool.

    Step 7: Add lemon curd

    Remove the loaf from the tin and spoon over the lemon curd, spreading with the back of a spoon.

    Step 8: Prepare and add sugar coating

    Combine the sugar and tea leaves in a small bowl. Top the loaf with sugar coating.

Assembly

    Step 9: Serve

    To serve, slice and dollop with yoghurt, a little extra lemon curd and a couple of blackberries. Enjoy!
