Creamy Tuscan Orzo
Easy vegetarian recipe that requires less than 10 minutes of work. Everything just cooks together in the oven. It's creamy and cheesy, but also packs in a lot of veggies, so it's really filling.

Step 1: Preheat Oven
Preheat your oven to 375°F (190°C).

Step 2: Combine Ingredients
In a large oven-safe skillet or casserole dish, combine the orzo, vegetable broth, heavy cream, sun-dried tomatoes, spinach, and minced garlic.

Season with salt and black pepper to taste.

Step 4: Cook
30 minCover the dish with foil and bake for 25-30 minutes, or until the orzo is tender and most of the liquid has been absorbed.

10 minRemove the foil, stir in the grated parmesan cheese, and bake uncovered for another 5-10 minutes, or until the cheese is melted and bubbly.
