Courgettes, harissa, chickpeas and feta, baked, smooshed, and served
Light, fresh and super simple. This is the kind of spring dinner we're all about. Courgettes, harissa, chickpeas and feta, baked, smooshed, and served on top of whatever you fancy. We went for a pilaf, but you could pick pasta, potatoes, sourdough of plain rice.

Step 1: Preheat oven
Turn your oven to 200°C/Gas 6 to preheat.

Step 2: Combine ingredients in roasting tray
Throw the chunks of courgette and chickpeas into a roasting tray along with the harissa, 2 tablespoons of olive oil, a good squeeze of lemon, and a seasoning of salt and pepper. Mix well.

Step 3: Add feta and honey
Nestle the block of feta into the middle of the tray. Zig-zag the feta with some olive oil and then drizzle over the honey.

Step 4: Bake
40 minPop into the oven and bake for about 30 -40 minutes, or until the courgettes are completely tender and the feta is browning on the top.
Assembly

Step 5: Mash and serve
Roughly mix the feta into the courgettes, and spoon it over whatever you've chosen to serve it on.

Step 6: Garnish
Finish with fresh herbs, toasted almonds and lemon wedges for tweaking the acidity.
